Winter officially arrived this week and I’m thinking that my days of summer salads are numbered. However, with a little bit of spinach still growing in the garden, I wanted to put it to good use!


(For the salad)

2 avocados

A bunch of asparagus

1 clove of garlic (crushed)

Zest of 1 orange

Drizzle of avocado oil

100-200g of pine nuts (however much you have lying around in the cupboard)

A large bunch of spinach

1 cup of cooked rice (you could cheat and buy one of those vacuum packed ready cooked bags)

(For the dressing)

Juice of 1 orange

1 large tablespoon tahini


Turn the oven on to 180 degrees. Cut the avocado in half, remove the stone and place in a roasting dish with the asparagus, garlic, orange zest and pine nuts. Drizzle with the oil and cook for about 15mins (remove when the pine nuts start to brown. Then stir in the rice, spinach and dressing. Enjoy!
